Balinese Chicken Curry

Ingredients

  • 1 cup jasmine rice
  • 400g boneless chicken thigh fillets, cut into pieces
  • 1 carrot, thinly sliced
  • 1 spring onion, sliced
  • 2 tablespoons ayam goreng or Balinese-style curry paste
  • 400ml coconut milk
  • 2 teaspoons soy sauce
  • Vegetable oil

Method

  1. Cook the rice according to the packet instructions.
  2. Heat a little oil in a deep frying pan. Cook the carrot and white part of the spring onion for 3–4 minutes.
  3. Stir in the curry paste and cook for 1 minute.
  4. Add the coconut milk and ¾ cup water. Simmer for 5 minutes.
  5. Add the chicken and cook until completely cooked through. Stir in the soy sauce.
  6. Serve with the rice and top with the remaining spring onion.
